Duck wings soaked in soy, ginger, garlic. Tossed in 5 spice syrup with plum dipping sauce, spring onion and cucumber.

* 1/2 cup brown sugar
* 1/4 cup soy sauce
* 4 cloves garlic, minced
* Thumb piece Ginger, mincedΒ
* 1 Tbsp Chilli oil or flakes (to taste)Β
* 1 Tbsp Gurts Chinese 5 spice sauce
* 1kg Duck wingsΒ

* Gurts Chinese 5 spice sauce
* Baby cucumber, julienneΒ
* Spring onion, julienneΒ
* Sesame seeds

π π²ππ΅πΌπ±:
1. Firstly make marinade combining all the ingredients in a bowl mixing thoroughly. Add the duck wings and coat generously, place in a zip lock bag or Vacuum pack then leave in the fridge for at least 1hr (overnight is best).Β
2. If using a sous vide set temperature to 68*c and slowly cook for 8hrs.
If using oven, place on a lined baking tray and cook at 120*c for around 1hr or internal temperature of 68*c
3. For sous vide, once cooked, open the vacuum pack, drain the juices.Β
4. Place the wings in the fridge and leave to cook for around 1hr.
4. Pat dry and cook in a preheated airfryer at 200*c for 6mins until golden brown and crispy. Make sure you arrange the wings spaciously (in batches if necessary).
5. Toss the wings in a bowl with a Gurt massive drizzle of Chinese 5 Spice syrup.
